I am a SUCKER for a good tortilla soup with all the fixin’s. It is right up there with a homemade chicken soup in my book. The creaminess of the avocado combined with the acid of the tomatoes and richness of the beans. If you want to put this over the top, grill your corn Mexican-street-corn style and cut it off the cob for the soup. Also, add chipotles or jalapenos depending on your preference and tolerance for heat. I just throw cilantro in there by the fistful because my husband and I are kind of cilantro freaks. My three-year-old just tried it for the first time and he declared it was “yummy” as he snarfed down the peppers, onions and other amazingly healthy fare. I just chuckled to myself, and rubbed my hands together as he played right into my hands.
