By now, you all know about my unhealthy obsession with kale. Or should we say… my “healthy” obsession. And this recipe combines roasted kale, runny egg yolks and pork products. I will eat them on a boat and with a goat. I will eat them with a small country who will brunch at my table because I can make a ton of this at one time. However, I would take this recipe one step further: I would toast some English muffins, make a microwave hollandaise sauce and just complete the kale benedict right then and there. Oh, and instead of ham, I would substitute pancetta. The amazing pancetta funk just sends this thing right over the edge. I probably just added about a million calories but… some things must be sacrificed on the altar of taste my friends. Say… I like Kale Eggs and Ham. I like them… I like them Sam I am.
